Colibrí Jiménez is a Mexican chef with over 15 years of experience researching and cooking authentic ancestral Mexican cuisine. Her knowledge of Mexican culture and cuisine has led to appearances in series on Netflix and Amazon Prime. Colibrí is currently the head chef and owner of Tierra de Nadie, the first culinary apothecary, where she incorporates medicinal plants and herbs into her cooking.

The menu may change, and we reserve the right to make updates. Whenever possible, the food is prepared using fresh, locally sourced ingredients. The evening lasts about 3 hours, including an intermission. The event follows a set schedule, and all guests dine simultaneously at a shared table. When making your reservation, please enter the participants’ first names and any dietary restrictions in the free text field, as we are only able to accommodate them to a very limited extent on-site. Please note that a fully vegan version of the dinner cannot be provided.

I believe food is both medicine and art. For me, it is a privilege to be a Mexican chef. My country is full of biodiversity, indigenous culture, and ancient cooking techniques, and when I cook, I bring all of that to the table.
