Eco-Friendliness in Restaurant Operations with a High-Efficiency Composter – Food & Fun Festival’s Innovative Trial in the Archipelago and Turku

The international food event, the Food & Fun Festival, has launched an innovative composting trial aimed at reducing restaurant waste and producing high-quality compost fertiliser for use in primary production. The trial is being carried out in collaboration with Dieta, Kakolanruusu and Kustavin Kipinä.

In the trial, the daily organic waste from restaurants is processed using Dieta’s new high-efficiency composter. This model has the capacity to compost up to 30 kilograms of organic waste per day. The nutrient-rich compost produced is then delivered to the cultivation fields of Deli Verde and Kotipellon puutarha. It can be used in all types of cultivation, including urban gardens and other community growing projects.

"It’s fantastic to be involved as a partner in production and restaurant operations, helping to enable the cycle from field to table and back. With fewer transport needs, the carbon footprint of restaurant operations also decreases, and it’s very important for us to make this possible. There are also simple, concrete actions that promote sustainability. This composter transforms over 180 kilograms of organic waste into 18 kilograms of compost each month," explain Dieta’s Account Manager Minna Miettinen and Matti Kamppinen, describing the system’s operation.

The aim of the trial is to compost the daily organic waste from restaurants, reduce the amount of organic and mixed waste, and produce a nutrient-rich compost fertiliser for use in primary production. The fertiliser produced in the trial is delivered to the facilities of Deli Verde and Kotipellon puutarha, where it is used for soil enrichment and cultivation.

"It’s fantastic when companies get involved to enable ecological trials and sustainable practices," commented the event producer Jouni Kuru about the trial.

"We got our first experience with high-efficiency composting in our restaurant Kustavin Kipinä this summer, and the results were unequivocally positive. Ninety per cent of the organic waste was composted, including a large portion of paper and some cardboard."

Kuru explains that the composter allowed the restaurant’s waste management to be simplified and streamlined, which was extremely important in archipelago conditions.

"It also felt great to be able to return the highly nutrient-rich compost to production at Deli Verde’s garden."

Next, the composter will move to Turku, to the esteemed restaurant Kakolanruusu, known for its open-fire cooking and shared feasts. The restaurant will take part in the Food & Fun Festival in Turku in October, where visiting top international chefs will create unique tasting menus together with local restaurants.

The composting trial is being carried out in collaboration with the event organiser, the device’s importer Dieta, and the participating restaurants. The composter’s weekly hygiene programme ensures safe and odourless use, making it suitable even for compact urban spaces.
